American market-cow beef has found the solution to the  beef resulting from grain-finished steers and heifers, by ground it and blended with fat trimmings from conventionally produced steers and heifers or fat trimmings from fed (white-fat) cows. The beef resulting from grain-finished steers and heifers is characerized by an undesirable flavors and less juice than conentional one.
This study shows the evolution of palatability of beef with the age of animal and the different factors that influence it.
